A staple in Southern Chinese cuisine and commonly used in dishes to impart both a sweet and umami flavour without the fishy taste. Dried scallops are rich in protein, essential minerals and vitamins.


TCM Functions

Nature: Slightly warm

Taste: Sweet, salty

Nourish yin, tonify blood, replenish the kidney.

How To Use

  • To prepare: soaking in water for ~1 hour, or until soften. Once rehydrated tear up the scallops into their smaller fibres.
  • Add to steamed egg, congee and stir fries.
  • If adding to soups and stews, they do not need to be rehydrated.

Storage

Refrigerate in an airtight container once received. You can also freeze them for longer storage.
